We use trimmed shoulder steak for our finest mince.  Butcher shops in the past were built on the reputation for their mince.  We were no exception and to this day mince is our biggest seller and never lets us down. Our mince is in excess of 95% lean and can be used for chilli con carne, bolognese, cottage pie or just plain old mince & tatties.
